Turkey sirloin with orange sweet and sour sauce and pomegranate

  • 500 gr. Turkey sirloin (2 units)
  • 8 Bacon slices
  • 50 gr. Butter
  • 75 gr. Brown sugar
  • 4 Oranges (juice) 500 ml. approximately
  • 1 Small pomegranate
  • 50 ml. Balsamic vinegar
  • 50 ml. Aged rum

Melt half the butter in a Magefesa Fit Dutch oven and add the sugar when boiling. Set the balsamic vinegar and aged rum when a bit caramelized. Let it cook for some minutes until alcohol evaporates. Moist with orange juice, season to taste and let it cook until thickened. Clean and cut the sirloin in a way that we get four portions. Season and spice to taste with the condiment for tacos.
Wrap each portion with two bacon slices and close with the help of some toothpicks. Melt the rest of butter with a bit olive oil to protect it in a skillet (Magefesa Fit model cookware set). Add the rolls to the skillets and Brown over medium heat. Do not let the butter burn. Once rolls are browned, moist with some sauce and let them cook for 4 or 5 min. Check the sauce, thicken with a bit cornstarch, when necessary, dissolved in cold water.
We may cut rolls in the middle or slice them into 5 mm. thick slices. Cover with the sauce and serve it hot.
