Homemade Gazpacho

Ingredients

  • 2 Pounds ripe plum tomatoes.
  • 1 Cucumber, peeled, seeded and chopped.
  • 2 Green peppers, seeded and chopped.
  • 3 Garlic cloves, minced.
  • 1 Red onion, finely chopped.
  • ½ Cup olive oil.
  • 2 Tablespoons fresh lemon juice.
  • Salt and freshly ground pepper.
  • Vinegar to taste.

Instructions

Blanch the tomatoes in boiling water for about 30 seconds. Peel and remove seeds. Chop the tomatoes and place in a blender with remaining vegetables. Incorporate oil, vinegar, lemon juice, salt and pepper. Blend until coarsely pureed. Taste and rectify seasoning if needed. Refrigerate for 1 hour to chill. Serve cold.
