Grilled pork chops in ginger plum sauce

  • 4 Bone-in pork chops, at least 1-inch thick.
  • 1 Pound ripe plums, pitted.
  • 4 Garlic cloves, minced.
  • 2 Tablespoons minced fresh ginger root.
  • 2 Tablespoons honey.
  • 2 Tablespoons dry sherry.
  • 2 Teaspoons brown sugar.
  • 2 Teaspoons balsamic vinegar.
  • 1 Teaspoon kosher salt.
  • 1/2 Teaspoon freshly ground black pepper.

Place plums, ginger, garlic, honey, dry sherry, sugar, vinegar, salt and pepper in a blender and purée until smooth. Pour two-thirds of the mixture over the pork chops and marinate in the fridge for at least 8 hours or overnight. Reserve remaining sauce.Heat the grill to medium. Grill the chops for about 6 to 8 minutes per side, until done to taste. After a few minutes on the grill the sauce will start to caramelize. If the chops turn too dark, move them to a cooler part of grill to finish cooking. Serve with reserved plum sauce.
