How to roast potatoes to perfection

  • When it comes to the perfect roasting potato, not all the varieties allow for great results. What you’re looking for here is a floury/mealy potato, such as the Russet variety. Russet potatoes are tender yet firm, which makes them ideal for baking.
  • Since potatoes take a while to cook, parboiling them is always useful.  It cuts down on the final roasting time and ensures a smooth creamy texture. Peel and cut your potatoes. Try to cut them to equal sizes to ensure they cook evenly. Place them in a saucepan of cold, salted water. Bring to a boil, and cook for about 15 minutes. Drain the potatoes
  • Give your potatoes a good coating of oil to make sure they crisp up nicely in the oven and don’t stick to the pan. Opt for extra virgin olive oil. Besides being one of the healthiest for you.
