How to prepare cilantro dressings

Cilantro oil

Ingredients:

  • ⅔ Cup mild olive oil 0.4 º.
  • 1 Bunch of cilantro.
  • 1 Garlic clove.
  • Salt.
  • White pepper.
  • White wine vinegar.

Directions:

Wash cilantro under cold running water. Remove the thick stems. Place all the ingredients into the bowl of a Magefesa blender and process. Check for seasoning and pass through a fine sieve. Reserve in the fridge.

Coriander Mayonnaise

Ingredients:

  • 1 Cup mayonnaise.
  • 1 Bunch of cilantro.
  • 1 Garlic clove.
  • 1 Lime (juiced).
  • Ground black pepper.

Directions:

Wash cilantro under cold running water. Remove the thick stems -Place all the ingredients into the bowl of a Magefesa blender and process. Rectify seasoning. Reserve in the fridge.

Cilantro Yogurt

Ingredients:

  • 1 Cup Greek yogurt.
  • 1 Bunch of cilantro
  • 1 Lime.
  • Salt.
  • Pink pepper.

Directions:

Wash cilantro under running cold water, remove the thick stems. Place cilantro, lemon zest and salt to taste in the bowl of a Magefesa blender. Add the Greek yogurt and ground pink pepper. Process for few more minutes. Reserve in the fridge.
Cilantro dressings are ideal to accompany fish or meat dishes, salads or snacks.
