Spicy pressure cooker carnitas

  • 3 Tablespoons oil
  • 3 Pounds boneless pork shoulder, cut into 1 1/2-inch cubes
  • 2 Fresh poblano peppers, chopped
  • 3 Jalapeno peppers, chopped
  • 1 Serrano pepper, chopped
  • 1 Large onion, chopped
  • 4 Cloves garlic, chopped
  • 2 Teaspoons ground coriander
  • 3 Teaspoons ground cumin
  • 1 ½ Cups beef broth

Heat the oil in your Magefesa pressure cooker over medium-high heat. Turn pork pieces over after 30 seconds to quickly sear both sides. Stir in the poblano, jalapeno, and serrano peppers, onion, garlic, coriander, cumin,and beef broth. Lock the lid of the cooker and bring it up to pressure. Reduce heat and cook under medium pressure for about 1 hour. Remove the cooker from the heat and transfer to the sink. Run cold water over the lid until the pressure has been released. Carefully remove the lid, and serve.
