Place plums, ginger, garlic, honey, dry sherry, sugar, vinegar, salt and pepper in a blender and purée until smooth. Pour two-thirds of the mixture over the pork chops and marinate in the fridge for at least 8 hours or overnight. Reserve remaining sauce.Heat the grill to medium. Grill the chops for about 6 to 8 minutes per side, until done to taste. After a few minutes on the grill the sauce will start to caramelize. If the chops turn too dark, move them to a cooler part of grill to finish cooking. Serve with reserved plum sauce.
