White bean soup with clams

  • 1 lb White beans.
  • 1/2 lb Clams.
  • 1 Onion.
  • 2 Leeks.
  • 1 Green pepper.
  • 1 Carrot.
  • 1 Tablespoon choricero pepper pulp.
  • 2 Chili peppers.
  • 3 Garlic cloves.
  • Olive oil.
  • Chopped parsley.

Place the beans to soak for 12 hours. Place the beans, onions, leeks, carrot, green pepper and a drizzle of olive oil in a Magefesa Practika Plus pressure cooker. Cover with cold water. When it breaks into a boil add a bit of cold water. Repeat the process three more times (shock the beans). Close the cooker and bring up to high pressure. Reduce heat to the minimum and let cook for 10 minutes.
Remove vegetables from the cooker and process in a Protech Magefesa blender with a little cooking broth. Once blended return to the cooker. Slice garlic and chili pepper and brown lightly in a separate casserole. Add washed clams, and leave on the heat until they begin to open. Pour in a little white wine and sprinkle with the parsley. Add clams to the beans and boil all together for a couple of minutes. Season to taste.
