Warm fruity flavored ginger soup

  • 2 Kiwis.
  • Half pineapple.
  • ½ lb. Strawberries.
  • 1 Mango.
  • 2 Oranges.
  • 1¼ Pear juice.
  • 1/3 Cup muscovado sugar.
  • ¼ Cup butter.
  • Triple sec and aged rum.
  • Ginger.

Melt butter over low heat in a Stainless steel Magefesa casserole. Add the sugar and cook until it reaches a light caramel color. Flambé with the liquor, then add the orange and pear juices. Cook over medium heat. Chop fruit (kiwi, bananas, mangoes, strawberries, pineapple, etc). Add fruit to the soup according to their ripening condition, starting with the most unripe. Give it a gentle boil without letting the fruit turn into a puree. Remove from heat and flavor with grated ginger. Place a scoop of ice cream in the middle of a bowl. Arrange fruit around it and  then pour the warm soup over the ice cream.
