Vegetable stock

  • 3.5 l Water.
  • 2 Medium onions.
  • 3 Small carrots.
  • 2 Leeks.
  • 1 Stalk of celery.
  • 2 Garlic cloves.
  • 2 tbs. Virgin olive oil.

Optional ingredients:

  • Spinach.
  • Chard.
  • Tomatoes.
  • Pumpkin.
  • Green beans.

Peel the onions, carrots and garlic, wash the rest of ingredients and chop into quarters. Pour cold water in a Magefesa super fast pressure cooker and add the rest of ingredients. Close the pot and cook it over high heat. Wait until the working valve starts to release steam or rotate, depending on the type of pressure cooker used. At this very moment, reduce heat to the minimum required to keep pressure into the unit or until the working valve rotates slowly and uniformly. Start to count time, between 12 and 15 minutes. Once time has elapsed, remove the unit from the heat source and wait until pressure is fully released before opening the pot. Strain and keep.
