Tomato based sauce for pizza

  • 600 gr. Ripe tomatoes (pear variety).
  • 100 ml. Virgin olive oil.
  • 1 Onion.
  • 2 Garlic cloves.
  • 1 Sprig of basil.
  • 1 Oregano sprig.
  • Salt.
  • Black pepper.

Chop the onion into fine julienne and slice the cloves of garlic. Peel the tomatoes and remove the hard inner part from the stalk. Chop them. Heat half the oil in a Magefesa Dutch Oven, when it starts getting hot add the onion and fry it lightly for 3 minutes more. Add the sliced garlic cloves and let it cook 3 more minutes. Mix in the tomatoes and aromatic herbs, let it cook over medium heat for 5 or 6 min. by smashing and cutting the tomatoes with a spatula. Season it to taste. Pour the sauce into the jar of a Magefesa Licualia Plus blender and smash speed I while adding the extra virgin olive oil left. We will get a thick granulated puree. Let it cool before being used to cover the base of the pizza. 
This tomato may be frozen into portions and consume it slowly according to our needs.
