Stewed lentils with pickled partridge

  • 300 gr. Lentils.
  • 2 Pickled partridges, (see recipe).
  • 1 Onion.
  • 1 Green pepper.
  • 2 Garlic cloves.
  • 1 Tablespoon sweet paprika.
  • Salt.
  • Black pepper.
  • 30 ml. Olive oil (Bajo Aragón C.O.).

Cook lentils together with the onion, green pepper, cloves of garlic, paprika and olive oil in a Magefesa Star Pressure Cooker.  Close the pressure cooker and cook high-heat until reaching maximum pressure, low power down to the minimum and keep for 20 min. Carve partridges in quarters and let them cool.
When steam pressure is freed, open the pressure cooker and remove the onion, green pepper and cloves of garlic, grind them together with 100 ml of partridges’ pickle with the help of a Magefesa Licualia Plus blender.  Add the obtained sauce to the lentils, let it boil softly and adjust salt and pepper.  Add partridges to the pot so that they warm and serve ½ partridge per guest.
Lentils can be substituted by other legumes such as white beans, pinto beans, etc.
