Shrimp Ceviche

  • 1 lb Large shrimp, peeled, deveined.
  • 1 Cup fresh lemon juice.
  • 1/2 Cup olive oil.
  • 2 Avocados, diced.
  • 1 Jalapeno, seeded and finely chopped.
  • 1 Large red onion, chopped.
  • 1 Teaspoon honey.
  • Fresh cilantro, finely chopped.
  • Salt and pepper, to taste.

In a large bowl, combine all the ingredients except shrimp and avocado. Mix well. Cut the shrimp and add to bowl. Let marinate in the refrigerator for about 30 minutes. Remove shrimp from refrigerator and place in individual glass bowls. Top with avocado and serve with tortilla chips.
