Salt baked pork loin

  • 1 kg. Fresh pork tenderloin
  • 3 kg. Thick marine salt for baking
  • 1 tbs. Strong Dijon mustard
  • 2 tbs. herbs de provence
  • 1 tbs. Sweet paprika
  • Mild olive oil
  • Bell pepper

Preheat the oven to 410ºC. Prepare a blend with spiced herbs de provence, mustard, paprika and bell pepper. Marinade the pork tenderloin with this blend and let it rest. Moist salt with water. Extend a salt layer on a baking platter and set the marinated tenderloin on it. Cover with the rest of salt.
Insert the platter in the oven and reduce temperature to 374ºF. Bake for 50 min. Once time has elapsed, take it out and remove the salt crust. Slice the tenderloin into fine slices. Serve it accompanied by sauce, applesauce, roasted potatoes, etc.
