Roasted Vegetable Dip

  • 2 Large Sweet red peppers cut into pieces.
  • 1 Large zucchini, sliced.
  • 1 Onion, cut into rings.
  • 3 Garlic cloves, crushed.
  • 1 Tablespoon olive oil.
  • ½ Teaspoon salt.
  • Freshly ground black pepper.
  • 8 Ounces cream cheese.
  • Challah, foccacia or pita bread, for serving.

This simple and delicious appetizer can be prepared the night before. The only thing you´ll have to do is pull it from the fridge a few minutes before serving. Spread the vegetables evenly in a baking pan coated with cooking spray. Combine the olive oil, salt and pepper; drizzle over vegetables and toss to coat. Bake, uncovered, stirring occasionally, until they are soft and begin to turn brown around the edges, approximately 45 minutes. Remove from the oven and cool to room temperature. Place cream cheese and vegetables in a food processor and process until well combined and spreadable; do not process until completely smooth. Taste and rectify seasoning, if necessary. Serve chilled along with Challah, foccacia or pita bread.
