Roasted heifer entrecote with Cajun spices

  • 2 kg. Heifer entrecote
  • 200 gr. Butter
  • Sea salt
  • 2 Tablespoons powdered thyme
  • 2 Tablespoons oregano
  • 1/2 Tablespoon basil
  • 1 Tablespoon powdered garlic
  • 1/2 Tablespoon powdered onion
  • 2 Tablespoons sweet paprika
  • 1/2 Tablespoon chilli paprika
  • Black powdered pepper
  • Green powdered pepper

Preheat the oven to 428ºF. Grease the piece of meat with butter, which we will leave to room temperature. Prepare the mix of spices in a bowl, amounts are estimated, they will vary according to our taste. Season the meat and flavor with a mix of spices. Put the entrecote into the oven and leave it high heat cooking for 10 or 15 minutes until an external brown crust is formed.  Slow down temperature to 338ºF. and leave it baking for 20 or 25 more minutes.
To serve:
Once time has gone by, move it away from the oven, cover it with aluminium fold and let it resting for 20 minutes before chopping. Serve with baked potatoes or crisps or some sauce to our choice (mustard, mushrooms, wine, etc.).
The most accurate method to roast the meat is using a cooking kitchen digital thermometer, we can move the meat away at the very exact moment depending on our taste. Temperatures and meat cooking ways are:

Medium rare 131 – 140ºF
Medium 140 – 149ºF
Medium well 158ºF
Well-done 347ºF
