Ranchero Sauce

  • 3 Ripe tomatoes.
  • 2 Medium size onions.
  • 3 Cloves of garlic.
  • 1 Lemon, (juice).
  • Serrano Chile to taste.
  • Oregano.
  • Thyme.
  • Salt.
  • Black pepper.
  • Olive oil.

Place the tomatoes, onion and cloves of garlic (unpeeled) in a baking sheet. Wet it with a little olive oil and season, sprinkle with oregano and thyme to taste and bake at 320ºF. until well roasted. Remove the skin from the tomatoes, onions and cloves of garlic. Place all the ingredients in a Magefesa blender and grind until getting a fine and homogeneous sauce. Add a little chicken stock when necessary to adjust the thickness of the sauce. It can be served hot or cold.
