Potatoes with spicy sauce based on tomato

  • ½ Kg. Potatoes
  • 400 ml. Tomato sauce
  • 3 garlic cloves
  • 2 Cayenne peppers
  • Parsley
  • Thyme
  • Pimentón (Sweet pepper)
  • Wiine vinegar
  • Olive oil

To begin with the sauce, heat mild olive oil in a Magefesa frying pan. When hot, add garlic and chilies, let them brown slightly. Remove the pan from the heating source and sprinkle some sweet paprika. Pour sherry vinegar and incorporate tomato sauce, spice with thyme and let it cook over low heat. Meanwhile, peel and chop potatoes into medium size dices. Heat plenty of oil in a Magefesa Wok.  Poach potatoes over medium heat until tender inside. Remove and keep
At the time of serving, fry the potatoes so that they remain crispy and golden; season to taste. Serve them partly covered with spicy sauce and sprinkled with chopped parsley.
