Pork Bratwurst sausages with Mediterranean garnish

  • 8 Pork bratwurst sausages.
  • 1 Medium onion.
  • 2 Ripe tomatoes.
  • 10 String beans.
  • ½ Small cauliflower head
  • 1 Red pepper.
  • 2 Garlic cloves
  • 1 Bunch of fresh basil.
  • 12 Pitted black olives.
  • Olive oil.
  • Salt.

Wash vegetables thorough. Cut onion, string beans, red bell pepper and black olives into thin Julienne strips. Grate tomatoes and mix with a little olive oil and salt. Separate cauliflower into small bouquets.
In a mortar, mash garlic with a pinch of salt and the basil leaves until you get a smooth paste. Then add the grated tomatoes. Heat a tablespoon of olive oil in a Delicia Magefesa frypan. When hot enough, add onion, bell pepper, cauliflower and string beans. Cook over medium-low heat for 5 to 6 minutes. Vegetables should be crispy tender. Once vegetables are ready, add black olives and the grated tomatoes grated, garlic and basil mixture. Reduce heat to a minimum and let cook for a few minutes. Season with salt and pepper to taste.
