Pears in red wine compote

  • 8 Medium pears.
  • 1 Tablespoon butter.
  • 1-2/3 Cup red wine.
  • ½ Cup muscovado sugar.
  • Salt.
  • Pink pepper.

Peel and chop pears into large dices discarding the heart. Melt butter in a Vitalia Magefesa pan. Stir in pear pieces before butter starts browning. Cook over medium heat for a few minutes. The cooking time will vary according to the ripeness of the pears, bearing in mind that compote should be tender firm in texture. Sprinkle with sugar and caramelize slightly. Pour in red wine. Add a pinch of salt and pink pepper to taste. Cook until the fruit reaches the desired texture. Strain into a bowl. Return wine to pan and reduce to half volume, pour over pears and let cool. This compote makes an ideal accompaniment to white meats such as turkey, chicken or pork, or braised game dishes.
