Sift together flour and baking powder. Add sugar and a pinch of salt. Beat the egg yolks. Add the milk and melted butter and then incorporate the dry ingredients to the mixture. Mix well until smooth. Whisk the egg whites until stiff peaks forms. Add to batter whisking gently to keep them from liquefying again. Let stand 20 min. Grease a Magefesa Frittata pan with butter. Pour a spoonful of batter, cook until it bubbles and flip over to brown the other side. These pancakes are originally served with Maple syrup, but it can always be replaced with what we have at hand: whipped cream, jelly, chocolate cream, caramel, etc.
We can give it a twist by incorporating some of our favorite ingredient to the batter, such as chocolate chips, nuts, fruits, or flavored them with cinnamon, orange blossom water, rum or fruit liquors.
