“More Better” Paella

  • 3 Tablespoons olive oil.
  • 3 Links chicken-apple sausages.
  • 1 Medium onion, diced.
  • 3 Cloves garlic, diced.
  • 1 Medium green pepper, diced.
  • 1 Large tomato, diced.
  • 1 1/2 Cups arborio rice.
  • 3 Bay leaves.
  • 1 Cup white wine.
  • 4 Cups chicken broth, preferably home made or low sodium organic.
  • 12 Jumbo shrimp, peeled.
  • 1 lb. Bay scallops.
  • 1 Pinch sea salt & ground pepper.
  • 2 Large lemons, cut in 4 segments.

In a paella pan heat the olive oil until hot. Saute the sausage until slightly browned. Add the onion, garlic, pepper and tomatoes and sautee until the onion is soft. Add the rice and stir to combine with the onion-mixture. Spread it to an even layer with the back of the spoon and add the bay leaves. Add the white wine and broth and bring to a boil. Season with salt and pepper. Arrange the shrimp and scallops somewhat decoratively, lower the heat to medium-low and cook for 20-25 minutes (depending on the type of rice you are using, some may take a little longer). Remove the pan from the heat and cover it with kitchen towels until all the liquid is absorbed. Taste  for doneness, the rice should be tender- and adjust seasonings.
Serve garnished with lemon wedges.
