Mexican Pizza with Oaxaca Cheese

Ingredients

  • 2 Pizza bases
  • Tomato sauce for pizza
  • 4-½ Cups grated Oaxaca cheese
  • 1 Cup sweet kernel corn
  • 2/3 Cup mashed refried beans
  • Jalapeño peppers, sliced (to taste)
  • 1 Ripe avocado
  • 1 Onion

Instructions

Once pizza dough is stretched, spoon a thin layer of tomato sauce, leaving about a 1/2-inch margin at the edge. Sprinkle with shredded Oaxaca cheese, covering tomato sauce evenly. Add remaining ingredients starting with the onion, cut into thin rings, slices of avocado, corn, refried beans and jalapeño slices. Sprinkle with grated cheese, just a little so that ingredients can be seen under the cheese. Bake at 390°F for about 15 minutes.
Oaxaca cheese is a spun cheese made of whole cow’s milk, usually raw. It’s often sold as flat strands of cheese wound into a ball. The texture of Oaxaca cheese is supple and smooth, white in color, and of milder flavor than mozzarella cheese. Its melting properties make it ideal for quesadillas and flaming cheese. It is also known as “quesillo” or string cheese.
