Lomi-lomi marinated salmon

  • 600 gr. Marinated salmon.
  • 3 Ripe tomatoes.
  • 2 Fresh chives.
  • 1 Red onion.
  • 2 Green chilli pepper.
  • Extra virgin olive oil.
  • Dill.

Chop salmon, once marinated, into 1 x 1cm. dices. Chop tomato roughly (concasse) and chives and red onion into brunoise the same size as salmon’s. Chop green chilli peppers into fine rings. Mix all the ingredients in a bowl and season with a bit of extra virgin olive oil. Add to serving bowls with powdered dill over.
