Homemade Brownies

  • 5 Oz Dark chocolate, chopped
  • ½ Cup unsalted butter
  • 1 Cup caster sugar
  • 1 Teaspoon pure vanilla extract
  • A pinch of salt
  • 3 Eggs
  • ¾ Cup plain flour
  • 2 Tablespoons cocoa powder
  • ¾ Cup walnuts, chopped

Preheat oven to 350ºF. Grease and line the bottom of an 8 inch square pan with parchment or wax paper. Melt the chocolate and butter in a stainless steel bowl over a saucepan of simmering water. Set aside to cool slightly. Beat the sugar, vanilla and a pinch of salt into the mixture. Whisk in the eggs one at a time, beating well after each addition. Sift the flour and cocoa. Add to the egg mixture, beating until smooth. Stir in the chocolate and walnuts, making sure they get fully incorporated, Pour mixture into cake pan and bake for 20-25 minutes. Remove from the oven and let cool on a wire rack.Cut into squares and serve at room temperature or chilled.
Recipe yields 16 brownies.
