Grilled Spinach Stuffed Swordfish

  • 4 (5 to 6-ounces each) Swordfish steaks.
  • 1/2 Cup olive oil.
  • 3 Tablespoons fresh lemon juice.
  • 2 Garlic cloves, minced.
  • 1/4 Pound fresh baby spinach.
  • 1/2 Cup crumbled feta cheese.
  • Salt and freshly ground pepper.

Preheat grill on medium high heat. Slice the fish steaks horizontally to create a pocket. Whisk together the olive oil (except 1 teaspoon) and lemon juice. Season the mixture with salt and pepper. Brush both sides of the swordfish steaks with 2 tablespoons of the mixture and reserve the rest. Heat the teaspoon of oil in a Magefesa skillet and sauté garlic. Add spinach and cook until wilted. Stuff swordfish steaks with sauté spinach and place cheese over spinach. Grill the fish on both sides until cooked through. Spoon remaining olive oil and lemon juice mixture over the steaks before serving.
