Green olive guacamole

Ingredients

  • 2 Ripe avocados.
  • 1 Shallot.
  • 2 Tablespoons green olive purée.
  • 2 Limes.

Instructions

Peel the avocados off, take pits out and chop, peel and cut shallots in four halves. With the help of a Magefesa blender, grind all ingredients. Emulsify with a little bit of virgin olive oil.
Tips:
This green olive guacamole can be used to go with roasted or grilled fish.
