Goat in garlic

  • 3 lb Goat, deboned.
  • 6 Garlic cloves.
  • 3/4 Cup mild olive oil (0.4°).
  • 1/2 Cup extra virgin olive oil.
  • Salt, white pepper.
  • 3/4 Cup beef stock.

Cut goat into 1-1/4 inch cubes approximately. Peel garlic cloves leaving one layer on. Heat a mixture of olive oils in a Non-stick aluminum Magefesa wok. When oil is hot enough, add garlic and sauté lightly until golden. Incorporate goat pieces. Fry until meat is tender and cooked through, and golden brown on all sides. Season with salt and pepper.
Serve along with a green salad and French fries.
