Fish Stock

  • 1 lb. Rockfish
  • 7 oz. Prawns.
  • 7 oz. Crab.
  • 1 Onion.
  • 1 Leek stalk.
  • 2 Carrots.
  • 1 Ripe tomato.
  • ½ Cup mild olive oil (0.4º).
  • ¼ Cup  brandy or white wine.
  • 8 Cups water.

Chop the onion, leek and carrots into large cubes. Heat the oil in a Magefesa Practika Plus pressure cooker and sauté vegetables for a few minutes. Add seafood and crush to release flavors. Pour in the alcohol and let it evaporate. Add the fish, tomato and water. Bring to a boil and then spoon off any impurities. Close the pot and set the cooker on position II and wait for it to come up to pressure (a steady stream of steam will start coming out of the pressure valve). At this point lower the heat and let cook for 10 minutes. This stock is used to prepare seafood sauces and rice with lobster.
