Cocoa haupia pie

Ingredients for haupia:

  • 400 ml. Coconut milk
  • 100 ml. Whole milk
  • 125 gr. Sugar
  • 120 gr. Corn starch
  • 1 Pinch of salt

Ingredients for the base:

  • 6 Eggs
  • 90 gr. Sugar
  • 60 gr. Pastry flour
  • 30 gr. Cocoa

For the cake:
Pre-heat the oven to 392ºF. Beat the eggs with sugar in a Magefesa Mixer with a set of mixing beaters until we get a solid and spongy cream. Sieve flour with cocoa and add it to whipped eggs, mix it with encircling and soft movements to prevent the dough from going down. Divide it among a baking sheet wrapped with kitchen nonstick paper, bake for 10 min. approximately.
For the haupia:
Dissolve corn starch and sugar in the milk. Heat the coconut milk with a pinch of salt in a Magefesa Casserole. When the coconut milk starts boiling, add the milk with corn starch and dissolved sugar. Let it cook low-heat stirring with beaters until the milk gets a texture similar to yogurt.
Pour coconut cream in a rectangular mould with the cocoa cake base, let it cool and keep in the fridge for about 6 hours so that it remains well set. Serve it cut into rectangular pieces.
It can be accompanied by honey, grated coconut, red berries, etc.
