Chimichurri sauce

Ingredients

  • 250 ml. Mild olive oil 0,4º.
  • 100 ml. Sunflower oil.
  • 125 ml. Vinegar from Jerez.
  • 400 gr. Concasse ripe tomatoes.
  • 1 Red onion.
  • 3 Garlic cloves.
  • Fresh garlic.
  • 1 tbs. Oregano.
  • 1 tbs. Thyme.
  • 1 tbs. Hot paprika.
  • ½ tbs. Cumin.
  • 1 Lemon.
  • Salt and pepper.

Instructions

Chop the onion and garlic into fine brunoisse and cut tomato concasse. Chop parsley and grate lemon. Add the rest of ingredients and mix well.  Adjust thickness with water.
