Soy-ginger Marinated pork tenderloin

Ingredients

  • 2 1/2 Lbs Pork tenderloin
  • Mustard powder to taste
  • Dried thyme to taste
  • 4oz. Dry sherry
  • 4oz. Low-sodium soy sauce
  • 3 Garlic cloves
  • 2″ Piece peeled ginger root
  • 6 Oz. Apple marmalade
  • 2 Tablespoons dry sherry
  • 1 Tablespoon low-sodium soy sauce

Instructions

Preheat oven to 325ºF. Sprinkle mustard and thyme to your taste over the piece of pork. To prepare the marinade, transfer the pork to a dish and pour in sherry and soy sauce. Mince the garlic and ginger and incorporate to dish. Cover and refrigerate overnight for best results. Remove the pork from the refrigerator 30 minutes before roasting. Bake at 325º F for 25 minutes per pound, until golden brown, basting occasionally with the marinade. While the pork is roasting, place the apple marmalade in a saucepan and heat over medium flame. Incorporate the tablespoons of sherry and soy sauce and mix until well blended. Lower the heat and simmer for a few minutes. Ladle the sauce over the tenderloin before serving.
