Pickled dressing for Muffuletta

Ingredients

  • 100 gr. Boneless black olives.
  • 100 gr. Boneless green olives.
  • 10 gr. Capers.
  • 25 gr. Pickled scallions.
  • 40 gr. Pickled cauliflower.
  • 40 gr. Celery.
  • 40 gr. Pickled carrots.
  • 20 gr. Pickles.
  • 1 Tablespoon oregano.
  • 1/2 Tablespoon pink pepper grains.
  • Extra virgin olive oil.
  • 1 Lime.
  • 1 Tablespoon mustard.

Instructions

Chop all solid ingredients with the help of a Magefesa Mincer. Prepare vinaigrette with the oil, lime juice, mustard, oregano and pink pepper. Stir it until well emulsified. Mix the vinaigrette up with the pickled mince, cover it and keep in the fridge for 24 hours. If we like it a bit spicy, a bit of chili can be added.
