Mint Chocolate Fondue

  • 14 oz 64% Dark chocolate frosting
  • 1 Cup 35% Fat cream
  • ½ Cup milk
  • ¼ Cup aged rum
  • 6 Mint leaves

Instructions

Pour cream, milk, rum and mint leaves in the fondue pot. Set the fondue at full power until mixture begins to boil. Reduce heat to half and let boil for about 5 minutes. Remove mint leaves. Add chocolate frosting and stir well until it melts. If using bar chocolate frosting, grate before to adding to the fondue. Maintain the fondue on low heat to keep the chocolate in liquid form.
Tips and tricks to create a delicious chocolate fondue.  
Ingredients to bathe in chocolate fondue can be natural or candied fruits, biscuits, muffins, sobaos, etc. If we want to add a crispy touch stir in chopped dried fruit or cereals. To flavor the chocolate, mint may be substituted with cinnamon, peel of citrus fruits, cardamom, liqueur, fruit, vanilla, coconut or any other ingredients of your choice. If we find dark chocolate to be too strong, we can replace it with milk chocolate, white chocolate or colored chocolate frosting. However, we will need to take into account melting  temperatures will vary depending on the type of chocolate used., being white chocolate  more prone to burn than dark chocolate.

Melting chocolate temperatures are:
Dark Chocolate, 130ºF to 135°F.
Milk or White Chocolate, 113°F to 122°F.

If we replace the chocolate coverage in the recipe with other chocolate varieties, we will also need to adjust the amounts of chocolate used, as follows:

  • 22 oz White chocolate 35%
  • 18 oz chocolate milk chocolate 40%
  • 13 oz dark chocolate 60%
  • 13 oz dark chocolate 70%.
