Broccoli, bacon and raisin salad

Ingredients

  • 2 Heads of broccoli.
  • 9 oz Bacon.
  • 2 oz Raisins.
  • 1 Red onion.
  • 2 Tablespoons pumpkin seeds, toasted and peeled.
  • Salt.
  • Black pepper.
  • Mayonnaise.
  • Mustard.
  • Soy sauce.

Instructions

Chop broccoli into small florets removing the hard part of the stems. Cut bacon into thick sticks and cook over medium heat in a Delicia Magefesa frypan until brown and crispy. Add broccoli and sauté for a few minutes. Season with salt and pepper to taste and reserve. Peel and chop the onion into julienne. Mix mayonnaise, mustard and soy sauce in a small bowl. To arrange the salad, place broccoli and bacon on a serving dish, then top with julienned onion, raisins and pumpkin seeds. Drizzle salad with the mustard and soy mayonnaise dressing. Bacon can be replaced by shredded chicken or turkey breast.
