How to fix a broken pie crust

The flaky texture of a pie shell is extremely fragile and can easily break. Don’t worry, sealing it back into shape is just as easy! Tears occur when pastry dough lacks moisture. Apply a light mist of water over the pie shell using a spray bottle, paying special attention to the area where the cracks are. Seal the edges of the break with your fingers and transfer the crust to a pie pan.

Grease the back of a second pie pan with non stick cooking spray and place it on top of the pie shell, pressing gently into the dough. This will help to seal any rips occurred when the pie was transferred to the pan. Remove the top pan and don’t forget to sprinkle the crust with coarse sugar (turbinado sugar) before baking.
This will give your pie a nice sweet crunch!
