How to prepare simple mojo sauces to enhance the flavor of your favorite dishes

Mojo sauces are marinades used to enhance the flavor of some ingredients. They are spread on fish, meats, and seafood prior to their searing in a frying pan, preferably nonstick.
MOJO SAUCE FOR SEAFOOD
Ingredients:
- ¼ Orange peel, minced.
- ⅓ Cup mild oil olive (0.4º).
- 2 Teaspoons walnut oil.
- ⅛ Cup ground almonds.
- 2 Teaspoons grated parmesan cheese.
- ½ Tablespoon dried potato flakes.
- 1 Drop lemon juice.
- Salt and chopped parsley.
Directions:
Place all the ingredients in a Protech Magefesa blender and process to create a homogeneous paste. Spread on seafood before and after sautéing in a pan.

SALMOREJO MOJO SAUCE FOR FISH
Ingredients:
- 2 Ripe tomatoes.
- ¼ Cup almonds.
- ¼ Cup bread to soak.
- 1 Garlic clove.
- 1½ Tablespoons oil olive.
- Choricero pepper pulp.
- 2 Teaspoons sherry vinegar.
- 5 Saffron threads.
- Salt, pepper, ginger.
Directions
Peel tomatoes and remove the seeds. Blend all the ingredients in a Protech Magefesa blender. Spread the sauce onto the fish with the help of a brush prior to searing on the grill.
COFFEE MOJO SAUCE (FOR TUNA FISH)
Ingredients:
- ⅓ cup almonds.
- 1 teaspoon soluble coffee
- ¼ cup oil olive 0.4 °.
- 2 tablespoons icing sugar.
- 2 tablespoons capers in vinegar.
- a pinch cardamom powder.
Directions
Blend all the ingredients together in a Protech Magefesa blender. Pass through a sieve and season with salt.
MOJO SAUCE WITH LETTUCE (SEAFOOD)
Ingredients:
- 1 Head of lettuce.
- ¼ Cup olive oil
- 1/8 Cup water.
- Vinegar.
- Salt
Directions:
Emulsify all the ingredients in a Protech Magefesa blender.
TOMATO MOJO SAUCE
Ingredients:
- ¼ Cup oil extra virgin olive oil.
- ¼ lb Sundried tomatoes.
- ⅓ Cup toasted almonds.
- ¼ Cup bread.
- 2 Caramelized garlic cloves
- Modena balsamic vinegar.
- Salt and white pepper.
Directions:
Blend all the ingredients in a Magefesa blender. Strain and adjust seasoning if necessary.
SPICY MOJO SAUCE
Ingredients
- 1 Garlic glove.
- 1 Tablespoon paprika.
- 1 Dried chili pepper.
- 1 Cup of water.
- Bread crumb.
- 5 Tablespoons olive oil.
- 2 Tablespoons vinegar.
- Cumin and salt.
Directions:
Crush garlic, salt, cumin, paprika and chili in a mortar. Add soaked breadcrumbs, oil and vinegar. Emulsify in a Magefesa blender.
