Cleaning and care instructions of carbon steel cookware

Carbon steel is a metal alloy. It is a combination of iron and carbon with the purpose of improving the physical and chemical properties of iron.     

MAGEFESA carbon steel cookware is made from high quality materials. Nevertheless, this fact does not sometimes prevent rust from appearing.         

Some factors that affect rusting are moisture, abrasive cleaners, salts and dishwasher detergents, food residues, oxygen, etc.

We highly recommend you to follow next easy guidelines for cleaning & maintenance to extend the life of MAGEFESA carbon steel products.          

Before first use

  • Remove the label stickers before first use. Never use a knife or metal tools to scrape the base as it may cause scratches and damage that will affect the following uses. Label stickers can be easily removed from your cookware. Rubbing alcohol is good to remove any residue from the label.
  • Add water to the pan and bring it to a boil over medium heat.
  • Wash the unit with warm water, mild soap and use a non-abrasive cleaning pad or sponge to remove remains of oil based lubricants and buffing compounds.
  • Rinse thoroughly and dry with a cloth or paper towel to prevent limescale formation and corrosion. If you air dry the piece it is quite probable that visual signs of rust may quickly appear.

While cooking

  • Seal with a thin coating of oil, use a piece of kitchen roll dipped in cooking oil wiped over the pan.
  • Never place an empty pan on a direct heat, avoid overheating.
  • Choose the stovetop not exceeding the base of the pan, mainly when using gas cooking hobs. You will get better results and will make cleaning easier.   
  • Do not use silicone or polyethylene utensils. Always use wooden or stainless steel utensils.
  • If you use tripod burner stands, never leave the appliance unattended during operation and keep it away from children.

Cleaning and maintenance

  • Do not place carbon steel paella pans in the dishwasher, above all in commercial dishwashers. Some dishwashing detergents may contain highly corrosive chemicals and damage our cookware.
  • After use, wash the piece with warm water, mild soap and a soft sponge.
  • After washing, dry immediately each piece with a dry cloth or paper towel to prevent rust and limescale formation.
  • For any food residues, soak in warm water and soap or bicarbonate of soda for a few minutes, then wash and rinse as usual.
  • After using your pan, soak it in warm soapy water for about an hour and then clean thoroughly using a scouring pad if necessary and describing circular movements.
  • Once it is clean, dry immediately and seal with a thin coating of oil. This is easily done using a piece of kitchen roll dipped in cooking oil wiped over the pan.
  • Never allow the pan to air dry after washing and to be left unsealed as it will rust. For long-term storage, completely cover the unit with a kitchen towel or plastic wrap and store in a dry place.
