In a bowl, mix the raw almonds with the sugar. Flavor with a little cinnamon or vanilla to taste. Add the egg whites and knead well with your hands until you obtain a homogeneous dough.
Depending on the freshness of the almonds, it may be necessary to add a little water to facilitate the kneading. Let the dough rest covered with cling film for about 8 h. After the resting time, preheat the oven to 200ºC.
Take small portions of the dough and shape the figurines that will be placed on a baking sheet. We beat the egg yolks and with the help of a kitchen brush, we paint the top of the figurines so that they are well browned. Bake at 185 gr. until the marzipan takes the desired color.
Tip
Once the figurines are cooled, store them in an airtight container until ready to eat.
